Last month I got an idea that I wanted some super thin crisp cookies. So I googled and found this recipe on the Martha Stewart website, for "honey lace cookies." Ohmagaaaaahhhh!!! They were soooo good!!! And they took about three seconds to make. The dough will look so small in the bowl, but they spread super thin, so don't worry. Just be sure to place the scoops far apart on the baking sheet, because they will run into each other if you don't. I made several batches, using different kinds of honey, to see if I could tell the difference, and I could! I preferred the darker honey, because it came through more and gave the cookies a more caramely flavor.
I'll post the link instead of copy/pasting. The only thing you'll wish you had more of is cooling racks. I have only two small ones. Not nearly enough! Lol!
